2 cups light brown sugar

2 cups Orange Juice

125g (1/2 block) butter

1 tbsp Mixed spices

500g Mixed Fruits

4 large eggs

3 Cups all-purpose flour

1 tbsp baking soda

1 tbsp vanilla essence

1/2 Cup Chopped Walnut

1/2 Cup Chopped Almonds

3 tbsp Chopped Orange Peel

1. Preheat your oven to 180 degrees C°. Grease and line an 8 inches tray.

2. In a large saucepan, over medium heat, bring to a boil the sugar, orange juice, butter, spices, and mixed fruits. Boil for about five minutes, then remove from heat, and let cool till lukewarm.

3. Once its cold, stir in the lightly beaten eggs. Keep aside.

4. In a large mixing bowl, sift flour, baking soda, vanilla extract, nuts and orange peel.

5. Pour the boiled fruit mixture into the flour and stir well until it is well mixed.

6. Pour into your prepared tray and bake for about 50 – 65 minutes or until a toothpick inserted into the center of the cake comes out clean.

7. Remove from oven and let it cool on a wire rack. Cover and store, if possible, for a few days before serving.

** If you would like a rich fruit cake, soak and refrigerate the mixed fruit in 1/2 cup brandy 1 week before baking.

** Before storing the cake, prick some holes on the cake with a fork and brush some brandy over the cake.
