250g Butter
60g Icing Sugar
2 Egg Yolks
400g Plain Flour
4 Tbsp Custard Flour
1 Tbsp Milk Powder
Jam of your choice for filling.

METHOD

1. In a large bowl, put all the ingredients together and knead into a smooth dough.

2. Allow the dough to rest for 10 minutes.

3. Roll out the dough on a flat surface and cut out the cookie using a tart cutter.

4. Place the cut cookies on a tray. Put desired jam on the cookies and bake in a preheated oven at 180 degree celcius for about 20 minutes.

** Makes about 120 cookies.
