1 Large Onion Chopped

2 Cardamoms

2 Star Anise

1 Cinnamon Stick

4 Cloves

2 Fresh Green Chillies (Cut in 4)

1 Tbsp Chopped Corriander Leaves

Few Curry Leaves

2 Tbsp Ginger garlic paste

3 Tbsp Kurma Mix diluted in water to make paste

1 Cup Boiled Vegetable (carrot/ cauliflower- cubed)

2 Large Potatoes boiled (Cubed)

2 Tomatoes

1 cup coconut milk

cooking oil

2 cups water water

salt (up to taste)

Method:

  1. Heat Oil in a shallow pan.
  2. Saute Cardamom, Star Anise, Cinnamon, cloves and curry leaves till fragrant.
  3. Add onions, ginger garlic paste, chilies and coriander leaves.Saute till golden brown.
  4. Add in Kurma paste. Stir until fragrant.
  5. Add in vegetables, potatoes and tomatoes.
  6. Add water and allow to boil.
  7. Then, lower the heat and pour in the coconut milk.
  8. Add salt to taste.
  9. The dish is ready to serve
